Cook in deep-sided non-stick frying pan with lid |
1 apple cored & chopped.
1 can sweet corn
1 sweet yellow onion chopped
1 yellow Summer squash chopped
6 baby bella mushrooms chopped
1 can black beans
4 small golden potatoes chopped
Olive oil, butter (Irish grass-fed dairy) - Drizzle olive oil across the majority of the pan, maybe 1/4 cup. Three large pats of butter.
Sprinkle liberally with paprika
Onions and potatoes and apple, squash on the bottom.
Saute for awhile to mostly cook the raw veggies. (30 minutes or so with top on pan) stir with wooden spoon or spatula a couple of times.
Add cream of mushroom soup and fully-cooked chicken apple sausage cut in 2" sections.
Simmer until fully cooked. (40 minutes with top on pan) stir with wooden spoon or spatula a couple of times.
I'll let you know how it turns out.
Experimental, my concoction.
All ingredients are available at Aldi.
Top with crumbled feta or white cheddar cheese curds when serving.

The flavor is very slightly sweet, but mostly savory. Wonderful, also good cold. Reminiscent of Panera Autumn Squash soup in flavor, but less sweet and more savory.
